innkeeping: Do packed lunches work?

Last year - our first as the Folkestone's innkeepers - we had quite a
few requests for packed lunches. Most of these guests were hiking in the
Great Smoky Mountains National Park or taking the scenic railway
excursion into the Nantahala Gorge, both requiring some sort of
lightweight carry-along container. While we referred last year's
requests to a local deli, we're considering adding packed lunches this
summer. And we're interested in hearing any other innkeepers'
experiences with lunches.

What kind of lunches seem to be the most popular - simple ham'n'cheese
sandwich with chips, apple and a cookie in a brown-bag? Or something a
little more "gourmet"? What about pricing?

We'd also like to know what types of containers work best. We've
considered reusable, insulated over-the-shoulder bags but feel that
something disposable would be best (except in the GSMNP where all trash
has to be carried out of the park). Any thoughts or recommendations for
packaging vendors/suppliers, for the overall bag as well as for
disposable, individual food containers?
