We do not take credit cards and with a deposit of one night's stay, we have had fewer problems than taking credit cards would cost. Repeat business is clearly preferable. Demanding the return of a form acknowledging cancellation policies almost seems counterproductive. Although many potential B&B customers assume we operate like hotels, (and act that way on their first visit to a B&B), in the long run this is not the market we seek. I guess our vote is that almost every reservation is a judgement call as to how it should be handled.
