We added food service to our Inn and was nervous about the first health
department inspection. I found the inspector to be very helpful and
understanding for first time operators. Our lights were not covered, we
had to get them covered. I removed the fancy lighting in the kitchen and
installed standard tube florsicnent(sp) lights. We converted a back
porch into a commercial kitchen to hold the stove, three compartment
wash sink, hand washing sink, and meat/veggies cleaning sink. Also added
shielded lights. But this was after our first inspection, we were given
a lower grade and promised the inspector to "fix" the lighting problem.
